Situated on Black Mountain, El Vergel Estate has been producing some of the most innovative and rare varieties of coffee in Colombia. Back in February we had the incredible opportunity to visit El Vergel and cup several of their soon to be released coffees. This java is the first of the three coffees we purchased on our trip. We had their anaerobic natural java last year and opted to give the semi-washed (honey) process a try this go around. Planted in 2016 with a quantity of 9,200 plants, this micro lot has been one of the most exotic on the farm. For this specific profile, it was processed as a semi-washed coffee, with an anaerobic fermentation in cherry followed by another anaerobic fermentation without cherry, and finished with a long drying period of around 15-20 days at solar dryers. We noticed big and beautiful tropical fruit floral notes with a crystal clear and sweet body that permeated each cup. One of our favorite coffees so far this year!
